To copy or save in an image from Safari or Mail, touch it with your finger for a couple of seconds and you will be presented with a popup menu of three options (Save Image, Copy, or Cancel).
If you choose to save the image it will be saved in the "Camera Roll" album in the Photos application (similar to taking a screenshot or a picture with the camera).
